The Slow Cooked Challenge September Round Up

 September turned out to be full of sunshine and, in Scotland, we had better weather than we had had all summer!  In saying all that, it has been chilly in the mornings and evenings so coming home to a slow cooked warming supper is definitely the order of the day.

We have a range of dishes to choose from in this month's Slow Cooked Challenge starting with Blackberry Pulled Pork with Blackberry BBQ Sauce.

This unusual and creative dish comes to us from the heart of rural France, from the blog of De Tout Coeur Limousin, that sauce looks so good!

Next up a hearty plate of Slow Cooker Chipotle Chilli Beans provided by Sarah at Tales from the Kitchen Shed.  I'm a sucker for chipotle chillies, so will be filling my slow cooker with these beans very soon.

Another vegetarian dish and one I think I may be making this week, as I have some portobello mushrooms that I didn't use at the weekend. This dish of Slow Cooked Portobello Mushroom Stew with Herb Dumplings comes from the lovely Dominic who cooks up all kinds of treat at Belleau Kitchen.

Back to Tales from the Kitchen Shed for some more tasty treats.  This time Sarah is serving up Spicy Courgette Chutney made in her Slow Cooker with a glut of courgettes.

Make it Moussaka!

I seemed to have a lot of bits and pieces of food left over after my visitors had been.  I had also bought two aubergines which were on special offer, so I decided to make a sort of moussaka.

Here are the ingredients I had, but you could use any combination as filling between the aubergines:

2 aubergines
2 rashers of bacon 
1 tin of tomatoes
Left over chilli
Left over shepherd's pie
400g mushrooms (half a family pack) sliced
4 grilled tomato halves
small quantity of cooked mangetout peas
200ml soured cream
1 egg
olive oil for brushing


Switch on your grill to full heat.  Slice the aubergines  lengthways and lay out on a baking tray, brush with olive oil.

Put the tray of aubergines under the grill and gril until golden brown and soft, turn and brush with more oil.  Do this until all of your aubergine slices are cooked.

Fry the bacon in a little oil in a large pan, when it is cooked, add the sliced mushrooms and saute gently until soft.  Add the left over chilli mixture and shepherd's pie.  Add a tin of tomatoes and heat through, mixing the ingredients together.

Place a layer of the mixture in the base of a large baking dish, then add a layer of aubergines, another layer of the meat and tomato mixture and then put the remaining aubergines on top.

Mix together the soured cream and egg together and season, spread over the aubergines.

Bake at 180C for 40 minutes until golden brown and bubbling around the edges.  Serve with crusty bread and a salad.

Gong Hey Fat Choy - Sang choi bao


Happy Chinese New Year and Welcome to the Year of the Dragon!  We celebrated Chinese New Year with another recipe from February's Delicious Magazine, San choi bao or prawn, mushroom and vegetable wraps, and I served it with the suggested garnishes of spring onions, fried shallots, toasted sesame seeds and peanuts.  

You are supposed to use the lettuce leaves as sort of wraps but they tended to fall apart.  The recipe suggested 'round' lettuce but I think it might work better with iceberg letter which might hold together better with the warm food.

Dragon – 龍 / 龙 (辰) (Yang, 1st Trine, Fixed Element Wood): Magnanimous, stately, vigorous, strong, self-assured, proud, noble, direct, dignified, eccentric, intellectual, fiery, passionate, decisive, pioneering, artistic, generous, loyal. Can be tactless, arrogant, imperious, tyrannical, demanding, intolerant, dogmatic, violent, impetuous, brash.
