Forever Nigella #7 - Chopped Fruit Salad

Update 26th July:  Sometimes, I'm so ahead of myself I meet myself coming back - hee hee!  The closing date for this challenge isn't until Sunday 31st, sorry for any confusion.
I'm cutting it quite fine with my entry for Forever Nigella, which is being hosted this month by Soul Curry.  The closing date is tomorrow!  I really struggled to find a recipe to make, mainly because I am not eating high fat and sugar foods, and Nigella is fond of all things creamy and sugary.  I looked through my books and was not inspired, so had a look at the Nigella.com site to see if I could find something suitable there and came up with Chopped Fruit Salad  it may not sound very inspiring, but the combination of fruits and yogurt made it perfect for my entry to the challenge.

I have to admit that I only used the recipe as a very loose guide as I have used Nectarines, raspberries and apricots rather than the strawberries, mango and blueberries that Nigella has chosen, but the principle is the same.
I gently crushed the raspberries that went in the middle layer and also added a tablespoon of Amaretto to each glass.  I used 0% Greek Yogurt on the top and then added some lovely whole rasps rather than pomegranate seeds for a 'gloriously jewelled topping' just as Nigella ordered , the glasses then went into the fridge to allow the fruit juices to mix and the whole thing to be 'iced' as per the challenge.

Forever Nigella #6 Sea Fish & Eat it!

This month's, Maison Cupcake, Forever Nigella challenge is being hosted by Housewife Confidential  and today is the last day to get your 'fishy in a dishy' cooked a la Nigella into the pot!  

I had some salmon marked out for our supper tonight, so had a flick through the index of  Forever Summer and found this easy peasy recipe for Seared Mustard-Coated Salmon.

The flavour of this coating is subtle but there is a nice combination of sweetness and savoury heat contained in the sugar and mustard rub.

Forever Nigella #5 Salad Days

 
I've missed a couple of Forever Nigella challenges, but I'm back for the salad event which is being hosted by Belleau Kitchen  for Maison Cupcake. Not that we are having salad weather here,  as I look out the window all I can see is rain streaming down the window, it's grey and cold too, more like autumn.

So I had a look through my Nigella books and decided on a recipe which I've looked at a few times but never quite got round to.   It's in 'Forever Summer' and is the 'Rainbow Room's Carrot and Peanut Salad'. 


Nigella's carrots are cut much more roughly, but I only have a fine microplane grater, so it had to do.  I don't normally have peanuts in the house (because I will just eat them!) but I bought some of Tesco's value peanuts and they were very good and not very expensive.  Other than that, it's just a bit of dressing, I used the last of my Fig vinegar that I got on holiday last June, the fruity flavour worked really well with this salad, which I ate for my lunch.  You only need a couple of drops of oil as the oiliness of the peanuts works really well with the vinegar.  Luckily for everyone, Nigella has posted this recipe on her website HERE.

Seduced by Chocolate!

It's time for another Forever Nigella challenge over at maisoncupcake.com.

Now Nigella has many delicious chocolate creations in her cook books, but I didn't want to make a big cake or a pile of cookies because you know what would have happened...yes, I would have eaten them all.  So I thought I'd see if I could find something that could be made on a fairly small scale, maybe a dessert that could be shared but not sitting there tempting me all week!

So here it is, Chocolate Rice Pudding

This recipe is in Nigella's Feast book but as I made some alterations by using double cream (it needed used up) and the white chocolate which was also left over from another recipe, so I can post the amended recipe.
Chocolate Rice Pudding (serves 2)
butter for greasing the pudding dishes
1 tablespoon of cocoa
1 tablespoon plus 1 teaspoon boiling water
100ml double cream
150ml milk
2 tablespoons pudding rice
50g good quality white chocolate, roughly chopped
1 tablespoon caster sugar

Preheat the oven to gas mark 2/150c.  Put the baking sheet in the oven to warm as it heats.  Grease two 150ml pudding bowls or ramekins.
Put the cocoa into a small measuring jug and dissolve with the boiling water then pour in the milk, stirring.  Divide between the buttered dishes.  Add 1 tablespoon of rice and divide the tablespoon of sugar between the dishes, stir.  Add the chopped chocolate and put them on the baking tray in the oven for 30-40 minutes.  Let stand for a while before serving.

It doesn't look particularly pretty when it comes out of the oven but it is really delicious, and not oversweet even with the white choc included.
