Recipe Clippings May Round up and June Linky

It's been a bit of a funny old month, I've been incredibly busy at work and also had some family matters that have taken up a lot of my time, so I've sadly neglected Recipe Clippings.

I have two recipes in the round up and I heartily thank Jane at Onions and Paper and Anukampa at A Pinch of Salt Make it all for joining me for Recipe Clippings this month.


Jane shared a very well used recipe clipping shared with her over 30 years ago by a Nepalese friend: Aludam, Nepalese Spiced Potatoes.  The recent earthquake in Nepal got Jane thinking about her friend and this recipe again.  Along with Jane I hope her friend was not hurt and did not lose any family in the earthquake.  This tasty recipe is definitely worth trying.

Anukampa has 'clipped' this recipe for Sweet and Savoury Pie from another blog and then altered this Russian recipe to suit the ingredients available in India, where she lives. The 'pies' are  made with a bread dough and stuffed either with vegetables or with a sweet mixture of sugar, coconut and raisins.  Both versions look delicious and were enjoyed by Anukampa's children.

Your 'Most Used' or 'Most Shared' Recipe Clippings


This is a recipe that I've had for about 30 years.  It has a little history as I got it from my neighbour who made such good Scotch Pancakes (drop scones) using this recipe that I asked her for the secret.  It turned out that she actually got the recipe from a second cousin of my husband, who was a great baker.  My Mum, who is also a great baker, tasted the pancakes made to the this recipe and was also very taken with them, so now makes hers to the same recipe.  Shockingly, I have never shared this recipe on my blog so have no photographs!  Hopefully, I'll be able to remedy this before the end of this month.

Recipe Clippings: March Round Up and April Linky

I'm beginning to see a bit of a pattern in the Recipe Clippings that are being shared this month, we have a feast of comfort food!   I'm not complaining though, I love homely dishes that fill you up and taste great.  Many thanks to everyone who joined me for Recipe Clippings this month, the Linky to join in with your Recipe Clippings for April is at the bottom of this post.


Cruffins - by Jane at Onions and Paper, a sort of cross between a crumpet and a muffin and no less tasty. It was snipped from one of my favourite, and much missed magazines, Family Circle.


Vietnamese Chicken Salad  a traditional Vietmanese recipe inherited from T.U.'s Grandmother and shared on Cloud of Cookmorphosis.

Warm Gingerbread Cake with Lemon Sauce is served up by Elizabeth at Elizabeth's Kitchen Diary alongside a very moving story which I urge you to read.   I love gingerbread but have never thought to serve it as Elizabeth has done, with a lemon sauce, so thanks for sharing this childhood recipe, Elizabeth.


Posh Toad in the Hole posh because it contains Chorizo and Pork Sausages wrapped in bacon and red onions.  This is the dish created by Deon at Food Jam from a recipe in Good Food Magazine.


Pastitsio is another delicious recipe from Elizabeth's Kitchen Diary and this time it's a recipe provided via a photocopy from Elizabeth's father. Well thank you Dad, now that really is a comfort food special, just what I like.

Mary's Tea Time Cake for Recipe Clippings


We have finally eaten all the Christmas biscuits and the cake tin was looking rather bare, so I had a flip through one of my recipe clipping folders and came across Mary's teatime cake, a recipe from the very talented and delightful Mary Berry and published in BBC Good Food magazine.

I've made this cake before and even blogged about it, but in case you missed it the last time I thought I'd give you another chance to enjoy the recipe.  I have found it to be a remarkably good recipe, works if you soak the dried fruit overnight, but also works if you soak it for a couple of hours as I did.  Mary suggests Earl Grey tea for soaking, but you can use any tea you like. You can also use any combination of dried fruit you like, I had a lot of dates, so half of my loaf is dates, the rest a mix of raisins, currants and mixed dried fruit.


Mary's Tea Time Cake

350g/12oz mix dried fruit
225g/8oz soft light brown sugar
300ml/1/2 pt hot tea, made with two tea bags.
275g/10oz self-raising flour
zest of a lemon
1 large egg, beaten

1. Put the dried fruit and sugar in a bowl and pour over the hot tea.
2. Leave to soak overnight, or if you are in a hurry for two hours.
3. Heat the oven to 150C/130C fan/gas 2
4. Line a 900g/2lb loaf tin with baking parchment or use a loaf tin liner
5. Add the flour, lemon zest and beaten egg and stir with a spoon till mixed through.
6. Bake for 11/4 to 11/2 hrs or until it is well risen, firm to the touch and a skewer inserted in the centre comes out clean.
7. Leave to cool in the tin for 10 minutes then turn out onto a wire rack to cool.
8. Peel of the baking paper or liner and serve sliced with or without butter

Pesto Chicken Macaroni Soup - Recipe Clippings


This is my entry for the January Recipe Clippings blog event, read more about it on the Recipe Clippings page.  I haven't quite got round to cutting out this recipe for future reference, it's part of 10 ways with Chicken Soup in the February 'Eat In' magazine.  There's a base soup recipe which you then change to make the different recipes, I chose to make the Pesto, Chicken, Macaroni Soup.  I replaced the macaroni with wholewheat fusilli and reduced the amount of pesto by half otherwise no changes.

Pesto, Chicken Macaroni Soup
Serves 4

1 tbsp vegetable or olive oil
2 onions, thinly sliced
1 carrot, quartered and sliced
2 celery sticks, finely sliced
2 waxy potatoes, diced (skin on)
500g chicken thigh fillets
2 chicken stock cubes
2 dried bay leaves
240g macaroni
200g green pesto

1. Heat the oil in a large saucepan over a high heat.  Saute the onions, carrot, celery and potatoes for 5 minutes.
2. Stir in the chicken, stock cubes bay leaes and 1.5 ligres boiling water.  Bring to the boil. Reduce the heat to low. Simmer, covered, skimming off any scum that rises to the surface, for 30 mintues or until the chicken and vegetables are cooked. Discard the bay leaves.
3. Remove the chicken to a chopping board and cool slightly, finely shred, then return to the soup with the macaroni. Cook for 8 minutes or until tender. Stir in the pesto. Season and serve.

The soup was really filling and had a lovely flavour, it was ideal to take to work for lunch and is hearty enough to make an excellent main meal with lots of crusty bread.

New Year, New Challenge - Recipe Clippings

Do you have a folder full of recipes cut from magazines, copied from your mother, grandmother or friends?  I have four A4 folders stuffed full of recipes and those are the ones I'm prepared to own up to, as there are also various notebooks with recipes I wrote out by hand in my teens and twenties!


I hadn't intended to create a new blog event, it all came about through an instagram post  about my recipe clippings which seemed to strike a chord with some others.  I was going to keep it to instagram but, after thinking about it, I realised that it would be hard to keep track only through instagram and there would be a real chance that the whole thing would just fade away.
