Nigella's Guinness Cake

Here is my son's birthday cake. It is from Nigella's 'Feast' and is a Chocolate Guinness Cake, mega amounts of butter and sugar, plus cream cheese, double cream & icing sugar in the icing. This is the third time I've made it for him, it was a special request.

Bacon Rolls on Sunday

We always have bacon rolls on Sunday morning. This bacon was called 'One Happy Pig' it was very tasty but not really any more than the usual bacon I buy, which tends to be the best quality supermarket bacon.

Mincemeat and Apple Crumble

Dessert was a Mincemeat and Apple Crumble. A friend gave me a jar of homemade mincemeat for Christmas in 2007 and I hadn't used it. I don't think it would keep for another year, so I combined it with some cooking apples, squeezed some organge juice over and topped with crumble mix, crushed shortbread biscuits (I wanted to use them up) and some chopped pecan nuts. Served it with Yeo Valley yogurt.

Corn and Chive Savoury Muffins

The Midweek Muffin on 'What the Cook is that?' was a Corn and Chive Savoury Muffin. I made these today and we had them with a bowl of soup. DH dropped his right into the soup :o I tried to be a bit more refined lol.

I found a great blog, with cooking challenges on a Friday, but also a Monday Sweet Treat and a Mid-week Muffin! I haven't made any of them yet, but I'm following this blog and I am planning to make some of the recipes soon.

Spicy Prawn Stir Fry

This was a delicious and very quick meal, I served it with noodles which will, of course, increase the calorie count.

Serves 4
185 calories per serving
1/6G fat
Prep Time 10 minutes
Cook Time 15 minutes

2 red onions
2 garlic cloves, crushed
1 red pepper, seeded and sliced
450g large peeled uncooked prawns
1 tsp smoked paprika
2 small courgettes, thinly sliced
115g chestnut mushrooms, sliced
2 tsp finely chopped fresh gineger
1 tbsp sweet chilli sauce
1 tbsp fruit chutney
juice of 1/2 lemon
1 tbsp runny honey
salt and freshly ground black pepper

1. Heat a non-stick wok. Add the onions and garlic and dry fry until soft. Add the red pepper, prawns and paprika, toss well, and continue to cook for 2-3 minutes until the prawns are cooked through. Season with salt and black pepper.

2. Add the remaining ingredients and cook for 2 minutes, tossing them well.

3. Serve straight from the pan.
