Pork Fillet with Honey and Mustard Glaze


In keeping with my Food Bloggers Diet, I am trying hard to keep to a healthy diet.  I had to try extra hard today because tomorrow, I am going out for afternoon tea for my friend's birthday.  That is sure to include scones and cakes and it would be rude not to eat them!

My diet guru of choice is Rosemary Conley, mainly because her diets actually include proper recipes and only occasionally include artificial sweeteners and I just avoid those recipes.  I picked up a copy of the Rosemary Conley magazine in the supermarket and it featured this pork recipe.  As it will be copyright I can't give you the full details, however here are the basics.

The pork fillet is seared in a hot pan, then you add honey and Dijon mustard to the pan and cook for a few minutes, then put in the oven and baste the pork with the glaze until it is cooked about 10-15 minutes.  You can then add a little stock to make a sauce or just serve with the glaze.  Easy, peasy and very delicious indeed!  I served the pork with mashed potatoes with only a little milk added (no butter) and broccoli.

Last night's dinner

I didn't take photographs of my meals this weekend. Too many things to do and I didn't think I would get them blogged because of the computer issues. However, thought I'd tell you what I age anyway!

Last night we had Spicy lamb with chickpeas well not quite, because I didn't like the look of the lamb in the supermarket, didn't have time to go to the butchers so got a piece of beef instead. This is such an easy recipe to make, you just have to start early and let it simmer gently.

I followed this with a recipe which has got me quite excited with the taste. It was Plums & blackberries in rosemary syrup which had a lovely flavour, not really reminiscent of rosemary at all, almost like ginger!

Spicy Prawn Stir Fry

This was a delicious and very quick meal, I served it with noodles which will, of course, increase the calorie count.

Serves 4
185 calories per serving
1/6G fat
Prep Time 10 minutes
Cook Time 15 minutes

2 red onions
2 garlic cloves, crushed
1 red pepper, seeded and sliced
450g large peeled uncooked prawns
1 tsp smoked paprika
2 small courgettes, thinly sliced
115g chestnut mushrooms, sliced
2 tsp finely chopped fresh gineger
1 tbsp sweet chilli sauce
1 tbsp fruit chutney
juice of 1/2 lemon
1 tbsp runny honey
salt and freshly ground black pepper

1. Heat a non-stick wok. Add the onions and garlic and dry fry until soft. Add the red pepper, prawns and paprika, toss well, and continue to cook for 2-3 minutes until the prawns are cooked through. Season with salt and black pepper.

2. Add the remaining ingredients and cook for 2 minutes, tossing them well.

3. Serve straight from the pan.

Diet!

It's time to lose a bit of weight. About 9lbs should mean that my clothes are comfortable again. It's a terrible problem when you really like food, anyway I am going to blog my diet in the hope that it helps to keep me on the straight and narrow.

I have decided to go back to Rosemary Conley recipes as they are real food and worked for me before. I really can't give up carbs, I've tried it and I just feel hungry, however giving up fat doesn't seem to bother me as much.

The exercise part is the worst for me, I just find it so boring, however, needs must. Recipes will follow as I get into the groove!
