Cake, Snacks and Slow Cooker Liners on my Kitchen Table


It's always exciting when a parcel arrives and, as a food blogger, I receive quite a few packages full of delights.  This month I have three very different products to share with you.


I've had cakes through the post in the past which tasted manufactured rather than homemade.  I was interested to see whether the cakes from Sendmecakes would live up to their description as homemade.  The slim box dropped through the letterbox and when I opened it, I couldn't believe how many slices of cake were packed in there.  Each slice is individually wrapped in cellophane and tied only with a piece of raffia which opens easily when you pull at the bow.


The cakes have no fondant icing, no butercream and no 'fake food' ingredients.  They stay moist for days (recommended to be kept in a cool place and eaten within 5 days of dispatch) and each one contains fruit or veg, herbs and spices and only natural extracts.

There is a full list of Varieties and Ingredients, my box contained the following:

Apricot Bakewell Sandwich - probably my favourite slice, so moist and tasty
Lemon and Stawberry Jam Sandwich - a traditional Victoria Sandwich with a real home made taste.
Kent Apple Cake - there were a couple of slices of this cake as it's one of the signature bakes.  It's a lovely homely cake.
Treacle Toffee Drizzle - that's the slice pictured above (half a slice on the plate), sweet crunchy toffee topping, soft sweet cake.
Original Brownie - dense brownie with a true chocolate taste
Apricot Slice - oaty, apricot traybake
Super Seed Flapjack - probably my least favourite, just too many seeds but oh so good for you.

I cannot recommend these cakes highly enough.  You could certainly pass them off as your own, they taste home made.  A box of these cake slices would be an ideal gift for Mothers Day, a birthday, New Home or Get Well Soon.

Slow Cooker Liners

Slow Cooker Liners are something I had read about in US Slow Cooker cookbooks and online recipe sites, but I had never seen them in the UK.  I actually spotted these on Twitter and have been sent a sample pack of 4 liners for review.

I've been asked what the point is of Slow Cooker Liners and I can see where people are coming from with this, it's really not so difficult to clean your slow cooker as most models have removable crocks or non-stick metal pots.  There are, however some instances when I would welcome not cleaning out the pot after making a particularly messy or sticky recipe which requires soaking and scrubbing.  In addition, the liners claim to keep your Slow Cooker like new, reduce wear and tear and lock in flavour.

I would also recommend them for making Double Dinners, where you cook two separate dishes at the same time/  I couldn't get the liners at the time, so used roasting bags. 

I made Dhruv Baker's 'Yellow Curry' from his book Spice.  It's loaded with turmeric which is notorious for staining everything.  The liner worked perfectly, they are BPA free food grade plastic so the dinner had no plastic taste and the CrockPot only needed a little bit of a wipe round.

I wouldn't use the liners every time but it would certainly be worth having a pack in the cupboard for particular dishes, double dinners and when you just can't face the washing up!

  • There is also the new Sunbites Crackers and Dip packs a tasty snack to add a moment of pleasure to your day. Flavours come in Caramelised Red Onion Chutney with Lightly Salted Crackers and Sundried Tomato and Roasted Red Pepper Salsa with Lightly Salted Crackers. The Caramelised Onion dip is a generous portion and designed to serve two with a small pack of Crispy Crackers.  I think you would probably need two bags of crackers to really enjoy all the dip, but you could use any leftover dip with burgers or on sandwiches.  The Crackers and Dip pack costs around  £1.00 - £1.89

Crunch-Topped Cod - A Random Recipe

I've missed a couple of months of Random Recipe posts, the blogger challenge run by Dom at Belleau Kitchen.  It's a lot of fun to take part, however due to impending work on my kitchen I've had to clear all my cookbooks away into bags and boxes, but I came across a pile of old Bella Cookbook magazines to which I applied the standard Random Recipe formula!

My random choice was January/February 2004, goodness nearly 10 years ago!  I did love this magazine, looking through these copies there are loads of recipes that I have made and must revisit.

However, Random Recipes is about making recipes you have overlooked and never made so my random pick is Crunchy Topped Haddock Cod, or other white fish of your choice.  I used frozen cod because it was what I had in the freezer.

Crunch-Topped Cod
Serves 4
4 (175g/6oz) pieces of cod fillet (or other white fish)
4 small tomatoes, sliced
2 tbsp olive oil
1 garlic clove, peeled and sliced
2 (250g) bags spinach, rinsed and drained
1/2 tsp freshly grated nutmeg
1/2 (250g) tub mascarpone cheese
75g/3oz Cheddar cheese, grated
1 (30g) bag plain crisps, lightly crushed

1. Preheat the grill to high.  Place the cod on a foil lined grill pan. Season with salt and pepper.  Top with tomato slices. Grill for 3-4 minutes until the fish is cooked through. 
2. While the fish is cooking, heat the oil in a large pan.  Fry the garlic of r1 min.  Add the spinach. Cover; cook over a medium heat for 3-4 minutes until wilted.  Draini n a sieve, pressing out the excess liquid with the back of a spoon. Season with nutmeg and freshly ground black pepper.  Keep warm.
3. Apread the mascarpone over the tomatoes an fish.  Top wth Cheddar chees; season.  Grill for 2-3 minutes until melted. Scatter over the crisps; gril lfor 1 min until golden. Serve the fish with the warm spinach.


I made some mashed potatoes and served them topped with the spinach and cheesy fish.  The from fish fillet flaked easily and the combination of the creamy mascarpone, juicy tomatoes, sharp Cheddar cheese and crunchy crisps was a total delight.

Walkers Mighty Lights - Review

 

I have a bit of a confession to make...I just love crisps and snacks, I would probably choose them over cake and chocolate.  But I'm very aware of the fat and calorie count in the average pack of crisps so I try not to buy them as they are just too tempting.

With 30% less fat than standard crisps, Walkers Mighty Lights are the perfect way for me to enjoy my guilty pleasure without the guilt! They are tasty, ridged crisps that come in three flavours - roast chicken, cheese and onion and lightly salted. All the flavours are suitable for vegetarians, and are available in shops nationwide. They're made from real potatoes with no artificial colours of preservatives and they're a source of fibre. 

 
I would normally choose ready salted crisps and the Lightly Salted Walkers Mighty Lights were very tasty.  They are thick and the ridged texture helps with the crunch.  I don't know exactly how they are made but from looking at them I think that they are made with re-constituted potato (as with many other brands) rather than sliced potato, they are less greasy and have more of a baked flavour than a fried one. The flavour is good and I could detect no artificial taste that you sometimes get with reduced fat products.   I have also taste-tested the Cheese and Onion flavour and the Roast Chicken flavour, they both tasted as you would expect for these flavours and were not over-seasoned, allowing the potato flavour to come through.


I really liked that the bags are 25g which is quite enough, particularly for children's lunch boxes.

A 25g pack of  Lightly Salted Walker's Mighty Lights contains 114 kcal, 4.7g Fat (7%), 1.2g Fibre and 0.28g Salt (5%).

Ingredients: Potatoes, Sunflower Oil, Lightly Salted Seasoning.  The Lightly Salted Seasoning contains Salt, Flavourings, Sugar, Spices and Herbs

Tesco currently have Walkers Mighty Lights 6 pack for £1.00 (price correct on 27.08.13) which makes each pack just over 13p each which is a bit of a bargain.
