Sweet Potato,Ginger and Lemongrass Muffins


I was challenged by Knorr to come up with a creative recipe using their Knorr Flavour Pots which have just won Product of the Year.  You may have seen my Butternut Chicken Thai-Style which used the  Ginger and Lemongrass Flavour Pot and the Garlic Flavour Pot and the Lentil and Vegetable Soup which used the Garden Herbs Flavour Pot.

Knorr Flavour Pots have just collected first prize in the Sauce and Seasoning category for this year’s Product of the Year awards. Knorr Flavour Pots allow you to easily infuse your cooking with the flavour of fresh herbs and spices but with the handy convenience of dried. The range features nine different tantalising flavours, including Mixed Herbs, Three Peppercorn, Curry, Garlic, Mixed Chillies, Garden Herbs, Ginger & Lemongrass, Paprika, and Mexican.  In order to inspire some creative recipes Knorr sent me a box full of vegetables, tins and packets.

Amongst the vegetables was a nice big sweet potato, you can see it at the front, it nearly went into the chicken dish, but then I suddenly thought that it would be interesting to see if the Ginger and Lemongrass Flavour Pot would work in a sweet potato muffin, I got quite excited by the idea.

The ingredients of the Ginger and Lemongrass Flavour Pot are water, ginger spirit vinegar, glucose syrup, green pepper, salt, palm oil, garlic, sugar, basil, citrus fibre, cayenne pepper, coriander leaves, cardamom, onion powder, Kaffir lime leaves, aniseed, gelling agent (xanthan gum), natural lemongrass flavouring, natural chili flavouring.  A few things in there that wouldn't normally be in a sweet muffin, but I thought I'd have a go anyway.



Sweet Potato, Ginger and Lemongrass Muffins
makes 12

150g plain flour
150g wholemeal flour
2 tsp baking powder
2 tsp bicarbonate of soda
1 Knorr Ginger and Lemongrass Flavour Pot
450g  Sweet Potato (cooked and mashed)
125g soft light brown sugar
2 eggs
250ml orange juice
1 medium carrot, grated

1.Preheat the oven to 200C, grease a muffin tin  or line with papers.
2. In a medium bowl combine the plain flour, wholemeal flower, baking powder and bicarbonate of soda, cinnamon, nutmeg and allspice.
3. In a large bowl mash sweet potatoes.  Add brown sugar, eggs, orange juice carrot and the contents of the Ginger and Lemongrass Flavour Pot, mix together until well blended.
4. Add flour mixture to the wet ingredients, stirring until just combined and blended, don't over mix.
5. Spoon the mixture into the prepared muffin tin, filling the cups to the top.  Bake in the preheated oven for 15-20 minutes or until golden brown.

You can leave the muffins plain or make a water icing with icing sugar and lemon juice and drizzle over the top. 

The Sweet Potato, Ginger and Lemongrass Muffins were absolutely delicious and, unlike many muffins, they actually got better the next day!  There was no hint of savoury flavour and the flavours of lemongrass and ginger came through really well and the sweet potato kept them really moist and moreish.  I didn't intend for them to Valentine's Day Muffins, but they would make a very fine treat for anyone who likes a touch of spice.

Strawberry and Champagne Aphrodisiac Cheesecakes for Valentine's Day

Baking is off the agenda at the moment with my temporarily limited kitchen facilities. So I had to think creatively to 'cook' up some Valentine's treats.

Duerr's sent me a jar of their limited edition Aphrodisiac Jam, as well as containing strawberries and champagne it has some Horny Goat Weed added which is, apparently, a natural viagra!

 

Strawberry and Champagne Aphrodisiac Cheesecakes (no bake)

Makes 4

6 McVities Digestive biscuits (crushed)

50g butter, melted

1 teaspoon cocoa powder

100g full fat cream cheese

1 teaspoon caster sugar

100g Duerr's Aprodisiac Jam

Whipped cream (optional)

four silicone cupcake cases

 

 

1. Mix the crushed digestives with the butter and cocoa powder.

2. Divide between the four cupcake cases and press up the sides to create a cup, refrigerate for at least half an hour until firm.

3. Put the cream cheese and sugar into a bowl and mix together with a wooden spoon. Divide between the cupcakes and refrigerate for another 30 minutes.
4. Place a couple of teaspoons of Duerr's Aprodisiac Jam on top of each mini-cheesecake and return to the refrigerator.
5. Just before serving, remove from the silicone case and, if liked, top with a swirl of whipped cream.

I was concerned that the cheesecakes would be too sweet, but they were actually really delicious. I can't vouch for the aphrodisiac qualities of the jam, but it certainly tastes good!

Mon Cherry Amour Cupcakes for Valentine's Day

Michael Benichou and his French pastry chef design cool and quirky cookies for luxury brand Moon Street.  The cookies are available to buy through exclusive outlets in Paris, New York and at branches of Harvey Nichols in major cities in the UK.  In this collection Michael share more than 25 recipes for cookies as well as deliciously different macarons, whoopee pies, brownies and cupcakes.

There are five chapters in this little book each illustrated with a beautifully styled photograph of the cookie or cake.
Cookies:  The chapter starts with ‘Le Cookie’, the original and most traditional of the cookie recipes, these are definitely on my list of makes.   It also includes Orange Crush Cookies, Praline Chic Cookies; Tres Yummy Cookies and Rebel Rose Cookies.

Brownies:  There are six recipes in this chapter starting with Bonjour Brownies, Sugar and Spice Brownies with cardamom and milk chocolate (mmmm!), The Supreme which combines brownie with orange and zest and a sticky Bailey’s syrup, Coffee Lover’s Brownies (might make these for my husband’s next birthday), the Bijou Blondies contain extra virgin olive oil and white chocolate, and finally Crackling Brownie French Fries  containing popping candy, cut into fingers and dipped in chocolate hazel nut spread.

Whoopies:  Very Berry Whoopies look a bit like a Devon split, a sandwich of whoopie pie fresh cream and summer berries, Made in France Whoopies are a salted caramel version, Fit for a Queen Whoopies are apparently inspired by a trip to London, Wicked Pecan Pie Whoopies with pecan nougatine, are you drooling?  Fit for a King Whoopies are an Elvis special: Peanut butter and banana. The final Whoopie is a Jello Whipped Cream Whoopie a sort of Jelly and cream or bite sized trifle.

Cupcakes: Good As Gold Cupcakes are a vanilla sponge with chocolate cream embellished with edible gold lustre dust,  Mon Cherry Amour Cupcakes (see below), Pavlova Cupcakes don’t have any meringue in or on them, which I thought was a bit odd. Cupcakes du Jardin are an unusual combination of Lemon, Basil and strawberry which sounds very good. Dulche de Leche Cupcakes are sure to be popular.

The final chapter gives us six Macaron recipes:  Flower Power Macarons include crystallised rose petals, Raspberry cheesecake Macarons are pink and swirled with darker pink, filled with a sweet cheesecake filling; Mojito Macarons have a marbled effect and a white rum, lime and mint kick! Possibly the most unusual combination is the Carrot Top Macarons which contain carrot, cumin and orange, Tea Voyage Macarons made with green tea and jasmine look very sophisticated.  The chapter and the book ends with the rich and decadent After Dinner Macarons a combination of rich chocolate and mint.

Who is it for?
This is a book of special occasion bakes, for showing off or treating a friend or loved one to a very special treat. All of the bakes look like those you would get at an expensive afternoon tea.  If you are a fan of Moon Street cakes and would like to try and make your own, then this book is for you.  If you are fed up of the same old cupcakes and cookies, then you might enjoy trying the unusual flavour combinations. 

Pros
  • Great photographs mean that you know what you are aiming to achieve.
  • Once you have mastered the basic technique for each bake, then you will find the variations are easy to achieve and might be inspired to make your own unusual combinations.
  • I learned a new way of making cupcake batter, I've never had a recipe which you leave in the fridge overnight, but it works!

Cons
  • There are only 27 recipes in this book.
  • I really didn’t like the way that the basic recipe, in my case for the cupcake was only written out once and as it wasn’t included in the My Cherry Amour page, I had to keep flipping back and forward.  I thought that was poor and expect each recipe to include all instructions on one page.

Ease of use
  • The book includes both US and Metric measurements
  • The quantities in the recipe I made were accurate to create the number of cakes stated
  • As I said in the Cons, the flipping back and forth was a nuisance.

Worth buying?
There are some really nice recipes in this book, but if you already have a lot of baking books you probably have enough Cookie, Brownie, Whoopie, Cupcake and Macaron recipes to last you a lifetime.

Mon Cherry Amour Cupcakes
Makes 12


Vanilla Cupcake Mixture
1/2 vanilla bean
3 eggs
15g/1cup icing/confectioners' sugar
150g/1 cup plus 2 tbsp plain/all purpose flour
1 tsp baking powder
150g/1 stick plus 3 tbsp butter, melted
50g/ 1/2 cup finely chopped pistachios, plus extra to decorate
12 glace/candied cherries

Pistachio Buttercream
180g/ 2 1/4 cups icing/confectioners sugar
50ml/ 3 1/2 tbsp milk
1 tablespoon pure vanilla extract
2 tbsp pistachio paste*
1 tablespoon Kirsch cherry liqueur
green food colouring (optional)

cupcake pan, lined with 12 cupcake cases
piping bag, fitted with a star-shaped nozzle tip

To make the Vanilla Cupcake Mixture, START THE DAY BEFORE you want to bake the cupcakes.
Split the vanilla bean length ways and scrape the seeds out into a bowl.  Add the eggs and sugar and beat with an electric whisk until tripled in volume and the beaters leave a thick ribbon trail when you lift them out of the mixture.

Sift the flour and baking powder into the bowl and whisk lightly.  Add the melted butter and fold in gently with a large metal spoon.Fold in the chopped pistachios. Cover and refrigerate for 24 hours.



Divide the mixture between the cupcake cases and bake in the preheated oven for about 15-20 minutes. Remove from the oven and allow to cool completely.


To make the pistachio buttercream put the butter sugar, milk, vanilla extract pistachio paste and Kirsch in a bowl and beat with an electric whisk or by hand with a wooden spoon until you get a light fluffy texture.  Stir in drops of the food colouring until you get the desired shade of pistachio green, if you like.

Fill the piping bag with the buttercream and pipe on top of the cold cupcakes. Balance a glace/candied cherry on top and sprinkle extra chopped pistachios around the edge.

*To make your own pistachio paste, roast 125g/1 cup pistachios on a baking sheet in a a preheated oven at 160C (325F) Gas 3 for 10 minutes, taking care not to let them burn.  Transfer to a bowl. Put 175ml/ 2/3 cup water and 60g/ 1/3 caster sugar in a saucepan and bring to the boil.  When the sugar has dissolved and the liquid is boiling, cook over medium heat for 5 minutes.  Carefully pour this syrup into a food processor with the roasted pistachios and 30g/ 1/3 cup ground almonds and pulse until you get a smooth paste.


I didn't bother with the pistachio paste or the green food colouring and used Vanilla Icing Sugar from Sugar and Crumbs rather than add the vanilla separately to the buttercream, I didn't have any Kirsch so used cherry brandy. I was impressed with the cupcakes, the texture is firm and not over sweet. My work colleagues were even more impressed and the cupcakes disappeared very quickly. The cupcakes look very luxurious, taste delicious and would be perfect for a Valentine's Day treat.

Heartbroken Valentine - A Hotel Chocolat Review

The subtle and chic charcoal box decorated with graceful white feathers, revealing beneath a glimpse of  pillar-box red base, hinting at the passionate contents...I raised the lid with great anticipation and -  sharp intake of breath - my heart was shattered in a thousand pieces (gross exaggeration, but it was pretty smashed up) I was so disappointed, indeed heartbroken.



You may have noticed that some of the the chocolate is missing, there certainly isn't enough there to make up the two halves of the heart.  In my heartbroken state there was only one thing I could do...EAT IT!   In my defence, you wouldn't have been able to see the cute little chocolate hearts in the photo if I hadn't:  Dark Mousse, Lemon Berry Tart, Strawberry Swoon and Caramel Praline.  My favourite would have to be Lemon Berry Tart, lovely tart lemon taste against the sweetness of the white chocolate, it was just divine.

The milk chocolate shell
The milk chocolate of the heart shell was okay, but not the best milk chocolate I've tasted, and given that this little baby costs £25 for 255g of chocolate, I think it's time Hotel Chocolat upped their game on the quality of their milk chocolate.  Generally I prefer dark chocolate and any Hotel Chocolat dark chocolate products I've reviewed in the past have been excellent.

About the breakage
I was genuinely very surprised to find this chocolate was broken. As I said, I've reviewed a few different chocolate products for Hotel Chocolat and never had any problems with breakages.  The box was well packaged and there were no obvious signs of the package having been damaged in any way.  However,  if I was disappointed when I opened the box and found the heart all broken, just think how unromantic it would be to receive a damaged gift for Valentine's Day.

Overall
I think this chocolate gift is overpriced, the milk chocolate shell does not make me swoon and although the heart shaped chocolates are very nice, you could find similar quality for a lower price or more chocolates for the same price.  If you do like Hotel Chocolat milk chocolate and are determined to 'give your heart' to your loved one,  I would suggest you buy it from the shop rather than online, ask to check that it is intact before leaving the shop, to be sure that your lover 'feels the rush of true love' and you don't end up with a broken heart on Valentine's Day.
