Black Treacle Marinated Chicken and a feast of flavours on my kitchen table in May


Time for another round up of tasty treats that have arrived at my Kitchen Table in May.
Marks and Spencer are a very British company and they have introduced the Tastes of the British Isles range to celebrate all that's great about British food.  There are over 300 delicious new food and drink products including 21st century twists on UK classics the revival of historical dishes and some great nationwide exposure of regional favourites.

The selection of treats I received included lovely buttery Scottish All Butter Shortbread Rounds, and a very tasty Parkin Loaf with the proper texture of oatmeal.  The Cucumber, Gin and Mint Relish is the perfect partner for salmon and  you can snack on some West Country Cheddar, Chive and Caramelised Onion Jumbo Peanuts and Cashews or Free Range Chicken, Mustard and Worcester Sauce Crisps with your aperitif while you are waiting they are all totally delicious


However, as soon as I spied the Black Treacle and Porter Ale Sauce and Marinade in the parcel I knew I couldn't wait to use it.  I knew I would love it and I was right.  It's ideal for a quick marinade for any kind of meat.  I marinaded some chicken breasts for a couple of hours, pan fried them to blacken the skin, then baked them in the oven for 20 minutes until cooked through and tender.  The marinade added a delicious flavour, not too sweet. The chicken breasts were good served hot with some of the unused marinade heated and served as sauce.  I also served the chicken cold with salad and it was equally good.  With barbeque season upon us, this sauce would be ideal to pep up your barbie fare.

Karen from Lavender and Lovage and I had a great response to the Great British Rhubarb Recipe Round Up.  There are many fabulous ways to cook and bake with rhubarb linked up, one of these was Rhubarb Crumb Bars from Sue at A View from Great Island and what a brilliant recipe it is. It's really simple to make and includes rolled oats, so good for you too.

I used Mornflake Organic Oats to make the Rhubarb Crumb Bars.  I took these in to work and they were greatly appreciated, there were also a few requests for the recipe.

Celebrate Mothers Day with Afternoon Tea


It's Mothers Day or Mothering Sunday on 15th March, that's next Sunday!  It's a great opportunity to treat your Mum, but when you are a busy Mum too, it's sometimes nice to let someone else spoil you both.


The good news is that you can treat your mother and/or mother-in-law and yourself to an afternoon tea with these lovely treats from Marks and Spencer.

Daffodil Madeira Cake, all butter sponge filled with buttercream and raspberry jam with soft icing and royal icing flowers - £12.00
*The Daffodil Madeira Cake is soft and moist with a nice layer of buttercream and jam, the icing is very sweet.  The daffodil decoration is delightful and very effective, overall it is a good cake.

A selection of Sweet Treats, milk chocolate coated honeycomb, white chocolate covered strawberries and milk chocolate discs - £9.00
*It is nice to have a slightly different take on a box of chocolates.  I enjoyed the honeycomb covered in chocolate and the white chocolate strawberries have a bit of a zing to them, you can definitely taste the fruit.  The milk chocolate discs are smooth and shiny and the chocolate has a good taste.

*The shortbread thins have a nice snap to them , the flavour of lemon does not overwhelm the delicate buttery taste.

* This pretty cup is a good size for tea or coffee and the buttery mini shortbreads are ideal for a little nibble to go along with it.

Duck and Plum Salad for Chinese New Year




Chinese New Year falls on the 19th of February this year, we leave behind the Year of the Horse and welcome the Year of the Goat.  Duck is often featured in Chinese recipes and I would often choose it if I was eating out, however it's a meat I cook only occasionally.

This salad was so delicious, the tender roasted duck and juicy plums contrasting with the savoury vermicelli noodles and peppery rocket.  All of the ingredients are available at Marks and Spencer, who provided also provided me with the recipe.

This  would make a great dinner party meal as you can roast the duck and plums earlier in the day then you only have to assemble the salad before serving.  


Duck Breast with Plum Salad
Ready in 30 minutes, Serves 4
Ingredients

· 2 tbsp olive oil
· 4 duck breasts, skin removed
· 8 plums, halved and stoned
· 1 star anise
· 3 tbsp port
· 2 tbsp soy sauce
· 125g rice noodles
· Thumb-sized piece root ginger, peeled and cut into matchsticks
· ½ x 25g pack fresh coriander, leaves only
· ½ x 25g pack fresh mint, roughly chopped
· 4 handfuls rocket leaves


1. Heat the oven to 190 degrees Celsius / 375 degrees Fahrenheit / gas 5 (170 degrees Celsius for fan ovens). In a small, ovenproof frying pan, heat 1tbsp of the oil. Season the duck breasts and fry for 2 – 3 minutes each side, until starting to brown. Transfer to the oven for a further 15 minutes, then remove and set aside.

2. Meanwhile, sit the plums, cut side-up, in a small roasting tin with the star anise. Drizzle over the port and soy sauce. Roast for 10 – 15 minutes, adding a splash of water to the tin if it becomes dry. Set aside.

3. Cook the noodles according to packet instructions, then drain and refresh under cold water. Heat the remaining oil in a small frying pan and fry the ginger for 2 minutes, until golden. Drain on kitchen paper.

4. Toss the noodles with the herbs and rocket. Divide among 4 serving plates and add the plums. Slice the duck breasts and arrange on top with the fried ginger, then spoon over any pan juices from the plums.

334 calories, 14.9 fat (3.5g saturated), 196g carbohydrates, 11.7g sugar, 2.9g fibre, 28.6g protein, 1.52g salt
