Persian Halloumi and a Toshiba Cookalong

Gousto are a company who deliver everything you need to cook delicious healthy recipes, delivered weekly for you to make at home.  You might wonder why you would do such a thing, but you only have to have tried one of their recipes to know that what you are getting is all the expertise of their chef in putting together fabulous flavours and none of the hassle of having to buy larger quantities of specialist ingredients that you may not use again.

I've reviewed Gousto boxes before and really enjoyed all the recipes, I also learned a few different techniques that I have used again.

Here are the ingredients for the Persian Halloumi recipe.  I was familiar with all of them except the barberries, which I have heard of but never tried.

However, this isn't the usual sort of food box review, because this time I had been invited, along with some other bloggers,  to be part of a Cookalong on Skype using the
Toshiba Satellite Radius 11 - The ultimate cook along companion.  We were guided through the recipe by Gousto Chef Alice,  the Cookalong experience was quite intense and, unfortunately the connection was not too good for some of us.  However, there was the Gousto recipe card to follow as well so, one way or another, we all managed to make the recipe which was really delicious.

Persian Halloumi
Serves 2 - 3

250g halloumi cheese
50g bulgur wheat
2 red onions
20g dried barberries
1 tbsp pomegranate molasses
10g fresh mint
1 tbsp ras el hanout
1 lemon

  1. Boil a kettle. Add the bulgur to a pot with 275 ml of boiling water, cover with a lid over a medium-low heat.
  2. Simmer for 5-7 min or until almost all the water is absorbed. Remove and set aside with the lid on for 10 min, until dry and fluffy
  3. Meanwhile, put the barberries in a small bowl and add 100 ml of hot water, add 1 tbsp of sugar and mix well.
  4. Peel the onions, cut them in half and slice finely. Chop the mint finely and grate the zest of the lemon.
  5. Cut the halloumi into thin slices (approx. 1cm thick)
  6. Cut the lemon in half and squeeze the juice over the halloumi ,combine half the ras el hanout with 1 tsp of black pepper for the spice mix.  Coat the halloumi in the spice mix.
  7. Add 1-2 tbsp of olive oil to a large pan on a medium-high heat,  once the oil is hot, add the onion and cook for 4-5 min or until soft and lightly caramelised.
  8. Add 3 tbsp of the barberry water to the bulgur wheat,  drain the barberries and add to the bulgur wheat. Combine the barberry bulgur with the mint, lemon zest, remaining ras el hanout, pomegranate molasses and 1-2 tbsp of olive oil,  season to your taste with salt and pepper.
  9. Push the onion to one side of the pan and add 1-2 tbsp of olive oil, add the halloumi and cook for 1-2 min on each side or until golden all over.
  10. Serve the bulgur wheat with the onion and halloumi

Here you can see Camilla from FabFood4All  on the left and Helen from Fuss Free Flavours on the right.  There wasn't much time for chatting and I didn't manage to see all of the other bloggers involved, but I did have a chat with Leslie Williams, the Dublin food writer, at the end of the cookalong when we were the only two left online. The built-in high-quality webcam and microphone on the Toshiba Radius 11  lets you easily chat with friends or take part in group Skype calls, as we did.  It would be a great way to talk your friend through a recipe with which they are unfamiliar.

The  Toshiba Satellite Radius 11 is a Windows 8.1 laptop and a tablet all in one. It was ideal for the Cookalong and also for viewing recipes online.  I use fewer cookbooks than I used to and often cook recipes by other bloggers, or from websites and, of course, I also return to Farmersgirl Kitchen to look up favourite recipes to make again.

The versatility of the Toshiba Satelitte Radius 11 makes it ideal as a perfectly portable kitchen companion, The innovative hinge lets you transform the Satellite Radius 11 into any one of five different modes – laptop, tabletop, presentation, audience and tablet. Its touchscreen makes it easy to flick through recipes, or catch up on your favourite TV cookery programmes online and cook along in your kitchen at the same time.  I also found it quite easy to set up and navigate my way around, much though I love my tablet, it is not very good for writing up blog posts and I enjoy having a proper keyboard and the full functionality of a laptop.

It's also amazingly compact, the Satellite Radius 11 easily fits onto kitchen worktops, and when in tablet mode the 29.5cm (11.6”) devices take up less space than a traditional cookbook, giving you more room to get creative.

Posh Burgers, Velvet Chicken and Scandi Salad - all in a box!

Do you find it difficult to decide what to cook?  And sometimes when you find a recipe you want to make, are you thwarted by not having all of the ingredients?  If the answer is yes, then you might want to order a Gousto box, especially as I have a special discount for your first order (see bottom of post).  Here is how it works:

  • You choose the recipes from the website
  • Gousto does the shopping
  • Gousto measure everything
  • Gousto deliver for free
  • You cook and enjoy

Since the last time I reviewed a Gousto Box in 2012 they've made their boxes even better. Prices have been lowered by 17%, so meals now only cost £4.00 - £5.80 including delivery (three meals £34.99). That's on average 16% better than most supermarkets according to Moneysupermarket.com

The boxes still deliver the same great quality, using high quality animal welfare meat from British farms and Soil Association certified organic vegetables.  Gousto also have a new website so you can easily make your menu choices on your mobile phone, you can also rate the recipes more easily.
There are two new chefs at Gousto, Remi and Alice, who are creating amazing new recipes every week.  Have a look at the menu, there are 10 new recipes every week for you to choose from.  I had three recipes, each for two people,  in my box and every single one of them was super delicious and I learned a few tricks that I will use in future cooking.
Posh Burger and Chips with Homemade Ketchup: Rosemary-rubbed chunky chips, shards of melted cheddar and a trio of delicious handmade condiments make this burger something really special. This was a straightforward recipe to make even though there were lots of different components.  Including chunks of cheese in the burgers works really well, you don't really taste cheese, it just adds a lovely creaminess to the meat.  The star of the show was the homemade ketchup which I will definitely be making again.
Crunchy Chicken Cashew Stir-Fry with Basmati Rice: This recipe uses the velveting technique.  Velveting is cooking meat in egg for an extra moist finish. It sounds challenging, but it's surprisingly simple and makes this chicken stir-fry extra special. Cashew nuts make a delicious addition to a stir-fry and they are also rich in essential minerals like magnesium, iron and zinc.

The stir-fry chicken was really simple to make and made two generous portions, I reckon you could serve it to three people without any complaints.  The velveting made for the most tender chicken I've ever stir-fried and I will certainly do that again.

Summer Mackerel with Warm Gem Salad: The use of lemon in this dish helps to give the recipe a real zing and brings out the flavour of the mackerel.

The quality of the mackerel was excellent and the flavour combinations were reminiscent of Scandinavian food. The onions are immersed in vinegar which reduces the pungency of it's raw flavour, another thing I hadn't tried before.

If you would like to try a Gousto Box you can get £25 off your first box by using the code FARMERSGIRL which works out at approx £9.99 for three gourmet meals for two.

I received a Gousto box to review, I was not paid for this review and all opinons are my own.

Gousto - Win Dinner in a box!

Ingredients for Spiced Pumpkin and Halloumi on Bulgar Wheat with Pomegranate Seeds
Although I love to plan ahead and decide what I'm going to cook, sometimes it's difficult to find the time to get organised and  because I love my food so much, I'd prefer not to have a freezer meal very often   That's why I was so pleased when Gousto Simply Cook contacted me to try out a couple of their Gourmet recipe boxes.

What is a Gousto Gourmet Box?
Gousto provides you with all the ingredients in the right proportions to cook delicious meals at home. The produce is organic, fresh and seasonal. Gousto’s recipes are developed by a team of passionate chefs and tested by their friends and families first (very picky people). You get to choose the recipes online and every week the selection is updated to make sure there’re plenty of new recipes for you. The recipes are delivered right to your doorstep once a week so you decide when to cook. Whenever you’re on holiday or just don’t have time, simply place the subscription on hold – it’s easy.

In practice it is very simple, in a trial subscription you can decide whether to try 3 meals a week or 4 meals a week.  Three meals a week  for two people for the Gourmet box costs £42 (around £5 per person per meal) and for the Veggie Box it costs £39.  Once you  have your trial subscription you can  log in to the Gousto Simply Cook website look at the list of recipes and choose what you would like to make,  and there is a wide range to choose from and they are added to each week.  You then add the recipes to you basket and sit back and wait!

Excellent Delivery Service
What I really liked about the website was the delivery address checker, I live in rural south west Scotland and have had problems with deliveries e.g. Ocado don't deliver to our area.  So I was delighted to be able to put in my postcode and find that my parcel would be delivered on a Wednesday.  Gousto are currently delivering to all postcodes in the UK apart from a few very remote areas, they deliver in London on a Tuesday between 1pm and 6pm and to other UK areas on a Wednesday, 9am - 5pm.  The ingredients duly arrived on the appointed day packed expertly in a box with a fleecy lining and icepacks, there were no issues about signing for it and Gousto are happy to take instructions as to where to leave the parcel if you are out.

I have the opportunity to try two of the recipes, so I chose:

Spiced Pumpkin and Halloumi on Bulgar Wheat with Pomegranate Seeds

I have always wanted to try halloumi cheese, but for some reason I never got round to buying it. What a fantastic recipe,  the pumpkin chunks are roasted in the oven with the onions, the halloumi cheese is fryed and served on top of a bulgar wheat salad which includes the roasted vegetables, pomegranate and mint.  It was really delicious and probably not something I would have made otherwise.

Oven Baked Pork Chops with Pears, Stilton and Pecan Nuts

The oven baked pork chops with pears, stilton and pecan nuts use a similar technique to the pumpkin recipe as the pears and onions are oven roasted with the spices.  I love blue cheese and the combination of the sweet fruit, slightly earthy taste of the pecan nuts and the sharp, saltiness of the cheese was a treat to eat.

Conclusion
The recipes are excellent and are definitely something that I would want to make and eat.  There are interesting and exciting vegetarian options.  The delivery service is one of the best I have experienced. There is also very little waste as you only get enough of the ingredients to make the meal.  I would consider using the service if I was going on a self catering holiday and wanted to make nice food without the hassle of shopping, but I don't think it is something I would use on a weekly basis.

If, on the other hand, you find it difficult to decide what to make but love good food and are happy to cook, this is a great way to try out some new recipes and ingredients.
