Watercress Open Sandwich with Coconut

As usual Saturday lunch was a a bit of a forage in the fridge.  I sliced a couple of very thin slices of sourdough bread and spread them with lighter than light Helmann's mayo, then piled up a mixture of watercress and baby salad leaves.  Some slices of red pepper and tomatoes topped it off.

Then I remembered that Jac at Tinned Tomatoes was looking for soups or salads that featured coconut for No Croutons Required,  so I sprinkled a little dessicated coconut on top.  This is almost as bad as the 'Tart' cake that Dom from Belleau Kitchen entered for Alphabakes, but if he can get away with it, I'm sure I can!

  1. LOL looks like Dom has started a trend ;-) Great sandwich! I've already submitted my we should cocoa entry otherwise I could just add a cherry on top of a cake and send it in :)

  2. How VERY dare you!!! :0). I love it. If you can't bend the rules slightly what's the point of living and to be fair you have used coconut and it is a salad sandwich plus you're promoting healthy eating which I'm sure Jac would approve! I love watercress too. Eat it in brown bread sandwiches with mayo. Love it!!
