I saw this recipe for 'Knock-up Fruit Cake' on Meandering Through My Cookbook, a blog by Hopeeternal. It sounded like my kind of recipe i.e. basic recipe plus whatever happens to be in your cupboard, which for anyone who has read my blog for a while will know is pretty much how I cook!

Interesting to see your comment on my cake, Janice. I find it keeps fairly well, unless the family have got there first and have eaten it all up! There have been occasions when I have left it in the oven a bit too long and it has been slightly dry so perhaps you are right. I will add a note about not leaving it in the oven too long. Think it is probably a question of experimenting with times - and of course every oven is a bit different too. Did you use the full amount of fruit as that keeps it moist as well.
